COOKING AND SURROUNDINGS

RICH AND UNEXPENSIVE COMPLETE MEAL DISH MADE WITH LEFTOVERS MIXTURE LOAF OR BALLS

Ingredients:

  • old bread;

  • noodle,

  • rice,

  • boiled corn meal,

  • couscous and/or similar.

  • Eventual legumes,

  • vegetables,

  • beans leftovers.

  • Any kind of cheeses and salamis.

  • Fish or meat leftovers.

  • One or two eggs to combine all together along with some milk if the mixture is still too thick,

  • favorite herbs and spices if you have some,

  • chilli or pepper,

  • salt (if necessary).

Preparation and execution:

Immerge into lukewarm water some old bread of any kind. Once it is perfectly softened, squeeze it to completely eliminate the absorbed water. Mash and place it into a large container. After chopping all of the other ingredients-leftovers, including the ones with fish or meat, according to the quantity of the mixture obtained, beat one or two eggs with salt, chilli or pepper and pour into the mixture.

Add some aromatic herbs and spices you like, if you have some, adjust with salt if needed. If the mixture is still too thick, according to own personal taste, some more milk can be added.

Now you can make a single big roll-loaf which has to be baked in the oven maximum temperature for 10/15 minutes. Serve immediately when it is still warm, along with some mixed salad or tomato salad very simply seasoned with olive oil, salt, Modena vinegar, herbs, garlic or fresh onions. As a first alternative, instead of a single loaf, it is possible to obtain several hamburger shaped pieces and quickly stir fry them in a no sticking fry pan with very little olive oil and serve them still warm along with the same salads.

As a second alternative, if a moister dish is desired, we can obtain little balls and immerge them into a boiling tomato sauce prepared with fresh or canned tomato with a little quantity of olive oil, aromatic herbs, spices. In this case no extra salad is needed because it has to be served with its cooking tomato sauce, but if desired, only some green salad. Enjoy your meal while thinking ... “incredibly rich and ... no waste at all!”.
