MUTTON IN
TOMATO SAUCE WITH GRAPPA
Ingredients:

mutton,

onion,
-
garlic,
-
oil,
-
grappa,
-
a bay leaf,
-
carrot,
-
salt,
-
tomatoes,
-
broth.
Execution:
into a capable
bowl put the carrot, the onion, the garlic all cut into small pieces. Add one
and one half glasses of grappa, place the mutton into this marinade and
leave it there for one hour. In a pen with a high rim pour some oil, add
the marinated mutton, cover and wait until the marinade has dried. Now add the
tomato and a scoop of broth, cook it on a very low fire, adjust with salt and,
almost at the end add the bay leaf. Serve immediately when it is still very
warm.
